White sausage cooked with roasted vegetables

We make this “botifarra blanca” or white sausage for the festivities of “Sant Joan” and our summertime “Festa Major” (mid-August). It is made with roasted egg plant or aubergine and peppers from our own vegetable garden and other local vegetable gardens in Falset. It is a summertime, festive “botifarra”!
