Boiled ham smoked on the bone

This boiled ham is made as if it were a cooked ham, but without de-boning it first. After letting it rest, we smoke it with German wood shavings which give it an extraordinary bouquet. Yet another example of how, despite our roots, we are not afraid of experimenting.
